Malvani Style Bombil Fry

Bombil fry or Bombil machi fry is one of crispiest fish fry recipe. Most commonly, bombil (Bombayduck) is fried with rava (semolina) due to which it is very commonly called as Bombil rava fry. In some places, you may find bombil fried with a mixture of rice flour, semolina and chilli powder. Due to the use of chilli powder, the fried recipe is called as Bombil chilli fry (Bombayduck chilli fry).

The malvani or kokani bombil fry recipe given below is traditonal used in Ratnagiri and Sindhudurg region of Maharashtra. Fresh bombil/bombayduck fish are mostly prefered for this recipe. This bombil fry recipe turns out to be the crispiest, if the fish is cut thin from the central bone.

Ingredients:

Bombil fish ( Bombayduck fish)

02 no

Chilli powder

1 and 1/2  tbsp

Turmeric powder

1/2 tsp

Ginger paste

1/2 tbsp

Garlic paste

1/2 tbsp

Kokam aagul (juice)

 1 tbsp

Salt

To taste

Oil

For shallow fry

Semolina

2tbsp

Rice flour

 1 tbsp

Lemon juice

1/2 tbsp

 

Method:

Cleaning fish:

1. First wash bombil thoroughly with clean water.

2. Now remove the head region of bombil and clean it well with fresh water.

3. Now cut the bombil from the centre and open it from the middle and remove        the central bone.

4. Keep the boneless fish aside.

Marination:

Marinated bombil 

1. Take bombil in a plate add 1 tbsp of chili powder , 1/2 tsp of turmeric powder ,     1/2  tbsp of ginger paste ,  1/2 tbsp of garlic paste , 3-4 pieces of kokam,         1/2 tbsp of lemon juice, salt and mix everything thoroughly.

2. Now keep a weight on marinated bombil , so as to get rid off excess water            from  bombil.

3. In another bowl, take 2 tbsp of semolina, 1 tbsp of rice flour and 1/2 tbsp of        chili powder with pinch of salt in it and mix properly.

4 . Once the excess water is removed from marinated bombil, take each bombil         piece and add coat it with the semolina and rice flour mixture.




Frying:


1. First take a pan and heat it well.

2. Now add oil in the pan  and allow it to heat.

3. once oil is heated add bombil in pan for frying.

4.Fry the bombil till its colour turns to golden brown and they become crispy.



5. Garnish crispy fried bombil with onion rings and  coriander.

6. serve it hot with steam rice .
