Pomfret fish fry or malvani rava pomfret fry is commonly cooked recipe in Maharashtra. Pomfret is not just well known in Maharashtra, but a very common fish used throughout world in various cuisines. There are number of recipes made using this delicious white skin pomfret fish. It is also known as 'Silver fish' belonging to the species of butterfish, prominently found in coastal waters off the Southeast Asia, South Asia and Middle East. In Maharashtra, it is locally called as 'Paplet'.

Pomfret is one of the mostly preferred over other fishes due to its flavorful taste. The fish has a very unique taste with mouth-melting meat. It is very easily available in local market. The price of fish in Maharashtra ranges between 100 - 1000INR depending on the size of fish. Go for fresh fish, to enjoy the delicious taste of it. To check whether the fish is fresh or not, see the appearance of fish, check the gills for bright red colour and touch the fish. If the fish is very soft at touch, gills are not bright red and appearance is very dull, it means that the fish is not fresh.

In this recipe, white pomfret fish was used. It was coat with a mixture of semolina (rava) and rice flour for giving crispness to the fish. If you re making this recipe for adults then add chilli powder to the mixture. whereas, if you wish to cook it for your kids then do not add chilli powder or add just a dash of it. Chilli powder in semolina and rice flour mixture gives a nice spicy flavour to it. Another tip I would like to give you is to make superficial cuts on the fish after thorough cleaning. The cuts made on the fish helps the marinating mixture (marination masala) to penetrate in the fish tissues add more flavour to it.

Pomfret Fish Fry

INGREDIENTS:

Pomfret fish

04 nos

Lemon juice

1 tbsp

Chilli powder

2 tbsp and 1 tbsp

Turmeric powder

1 tbsp

Ginger paste

1 tbsp

Garlic paste

1 tbsp

Kokum

5 piece

Rice flour

2 tbsp or As required (to coat fish)

Semolina (rava)

4 tbsp

Oil

To shallow fry

Salt

To taste

Coriander leaves

For garnish


                                        Prep. Time: 30 min                                 
                                     Cooking Time:10 mins                                   
                                        Total Time: 40 mins                                    
                                                 Yield: 04                                           


   

Method:

  • First clean pomfret fish, give some cuts on the surface of fish and then wash them thoroughly.
  • If you dont want to fry the whole fish then you can also cut the fish in small piece horizontally.

Marination:

  • For marination, take a big bowl and add pomfret in it.
  • Now add 1 tbsp of lemon juice and salt on the fish. Give it a nice mix. 
  • Then add 1 tbsp of turmeric powder, 2 tbsp of chilli powder, 1 tbsp of ginger paste, 1 tbsp of garlic paste and 5 pieces of kokum.

  • Apply this all spices to pomfret fish properly and keep it cover for marinating for about half and hour.

  • After marination period is over, the fish will look as shown in photo above.

Frying:

  • In a plate, add 2 tbsp of rice flour, semolina and Chilli powder.

  • Give everything a good mix.

  • Now add the marinated of pomfret in the frying mixture

  • Make sure to coat each pomfret pieces with semolina and rice flour mixture properly from all sides.

  • Now take a frying pan and heat the oil in it for shallow frying.
  • Once the oil is hot enough , fry the coated pomfret fish

  • Fry both the sides of fish till its colour changes to golden brown.

  • When pomfret is done, garnish it with coriander leaves and onion rings and serve hot.
