Malvani Kolambi Masala 

Prawns locally called as 'Kolambi' in Maharashtra are amongst the most loved crustacean fish variety. Prawns are easily to eat as they do not contain bones, plus they are very rich in flavour. Therefore, people of all age groups love to eat various recipes made from it. Kolambi (Prawns) are easily available throughout all local fish markets. Price is dependent on the variety and size of Prawns. There are number of ways to cook prawns, right from dry fried recipe to rich gravy recipes. Here, I am sharing with you a dry and spicy prawn recipe made very commonly in rural Konkan region of Maharashtra. 
Kolambi (Prawn) masala is made all over India, but if you taste malvani kolambi masala it has a unique taste of Konkan spices and a tangy flavour of kokum (Garcinia indica or Aamsul). These unique spices give additional flavour to prawns making the dish everyone's favourite. It is very simple and quick recipe. This recipe will make you enjoy flavourful prawns even in you busiest days.
The important spice responsible for giving this recipe an earthy konkan flavour is Kokum. It is grown extensively in the state of Maharashtra. kokum is a local name used in Maharashtra, it's botanical name is Garcinia indica. The fruits of this plant are deseeded and sundried. This dried form is called aamsul. Aamsul has a sour tangy flavour  with faint sweet taste. Its flavour balances  with other spices used in this recipe, giving a mouthwatering malvani flavour to Kolambi (Prawns).

Ingredients:

Prawns

10 -15 nos

Onion (large)

01 no

Garlic

09 cloves

Tomato

01 no

Turmeric powder

01 tsp

Chilli powder

02 tbsp

Kokum

5 pieces

Oil

As required

Salt

To tatse

Coriander leaves

For garnish

 




Method:

Cleaning:

  • First remove outer shell of Prawns properly.

  • Then remove the black string present on upper side of prawn properly, because it is not good for your stomach health. That string is basically the digestive track of prawns.
  • After cleaning wash the prawns thoroughly with water and keep aside.
  • While cleaning keep the head portion of prawns as it gives more flavour to your dish when it is cooked.
  • If you wish to store prawns then clean them and store in an airtight container in refrigerator.

Cooking:

  • Keep all required ingredients ready in a dish.
  • Then add some oil in a pan and let it heat.
  • When oil heats up, add chopped garlic and saute it for a couple of minutes.

  • Once garlic turn golden in colour, add chopped tomatoes and saute it till they become soft.

  • Now add chopped onions and cook them well.
  • Once onions cook properly then add 1 tsp of turmeric powder and 2 tbsp of chilli powder along with 5 pieces of kokam in it and give it a good mix.

  • When the masala is mixed properly, add prawns and incorporate them thoroughly in the masala mix.
  • Lastly add salt to taste with some chopped coriander, mix everything well.
  • Now cover the pan with a lid for 4-5 mins or till the prawns cooked.

  • Garnish the malvani kolambi masala with fresh coriander and served hot with chapatti, bhakari or with hot steamed rice.
